What is Konjac?
Konjac is a root vegetable that grows in parts of Asia. It’s known for its starchy corm, a tuber-like part of the stem that grows underground.
The corm is used to make a rich source of soluble dietary fiber known as glucomannan.
Historically people use konjac as traditional medicine and as a food source to make noodles and snacks.
Recently in the Western world, it’s used as a food additive and dietary supplement to lower plasma cholesterol, improve carbohydrate metabolism, and help bowel movements.
How are Konjac Noodles Made?
Shirataki noodles (or konjac noodles) are made from 97% water and 3% konjac containing glucomannan, a water-soluble dietary fiber, they are very low in digestible carbohydrates and food energy, and have little flavor of their own.
Konjac Noodles are made by mixing glucomannan flour with regular water and a little lime water, which helps the noodles hold their shape.
The mixture is boiled and then shaped into noodles or rice-like pieces. Shirataki noodles contain a lot of water.
How Do Konjac Noodles Have Zero Calories?

It was concluded that Konjac food is very useful in the prevention and treatment of hyperglycemia.
