To make your protein carrot cake, you’ll need one packet of carrot cake mix, 3 grated carrots, 3 large eggs, and a little milk, coconut oil, and walnuts. Add dry ingredients to one bowl, wet to the other, then fold together. It should be pretty thick! Pour into a cake or loaf tin, and bake for about 70 minutes.
Voila! It’s so easy, you can get your kids, or your nephews, or your dog involved (okay well maybe not your dog, but you get the picture..)! It’s up to you whether you add a little icing, or some butter to finish it off! We recommend butter when it’s fresh out the oven after cooling, then a little cream cheese icing for later. Yum!
